This 2 year oak aged brandy uses high proof clear brandy as a base.  This brandy usually enters the barrel (French and American oak #4 char—30 gallon barrels— always new) somewhere between 112-121 proof, depending on batch.  The brandy then sits in it’s respective barrel for no less than 2 years.

MASTER DISTILLER 

Following in the footsteps of my great grandfather who was arrested in Tennessee during prohibition for making shine; we do nothing different…except we have a license!  I’m Patrick Brooks, the head distiller at Tin City Distillery and Wine Shine.  We are located in the heart of Paso Robles, our drinking town with a farming problem.  My background in law, teaching credential, wedding officiant experience, and employment as a voice over artist has all led me to crafting spirits.  After all, we wouldn’t want you to go thirsty!  Cheers!

COCKTAILS

Tin City Swizzle — Tall Glass — 5-6 mint leaves - 1 oz lime
juice - 1/2 oz simple syrup -
1.5 oz oak brandy - dash walnut brandy - dash angostura
bitters - dash peychaud’s bitters
—place the mint leaves on the bottom of the glass — add
lime juice & simple syrup — lightly muddle — add oak brandy
& walnut brandy — fill glass with ice — float dashes of bitters
on top - lemon garnish or mint leaves

Suffering Bastard — Bucket Glass — 3/4oz oak brandy -
3/4oz gin - 1 oz lime - 3/4oz simple syrup — dash bitters —
ginger beer — add all ingredients (except ginger beer) to ice
filled shaker — shake and pour with ice into bucket glass —
float ginger beer to finish — garnish with a lime

TASTING NOTES

Wine Shine Oak aged brandy opens up in the glass with scents of vanilla, oak, and light tropical fruits. On the palate, the brandy has lightly sweet taste, lingering to a very balanced blend of oak, vanilla bean, and tropical fruits.
